Ingredients:

8 Tbsp. softened butter

1 Cup sugar

2 Eggs: well beaten

1 Cup buttermilk

3 Cups unbleached flour

1 Tbsp. baking powder

1 tsp. salt

1- 3\4 Cups Blueberries (Fresh, frozen or canned) drained

Instructions:

1. Work butter with a spoon until creamy and fluffy: then add sugar gradually, while continuing to work with the spoon until light.

2. Add eggs and milk; beat well. Sift together flour, baking powder, and salt and add to other ingredients.

3. Fill well-greased or oiled muffin tins 1/4 full, then place about 1 tsp. of blueberries in each section

4. Then top each section with batter until 2/3 full.

5. Bake at 400 degrees for 20 to 30 minutes.

Makes 2 dozen
