Ingredients: |
8 Tbsp. softened butter1 Cup sugar2 Eggs: well beaten1 Cup buttermilk3 Cups unbleached flour1 Tbsp. baking powder1 tsp. salt1- 3\4 Cups Blueberries (Fresh, frozen or canned) drained |
Instructions: |
1. Work butter with a spoon until creamy and fluffy: then add sugar gradually, while continuing to work with the spoon until light.2. Add eggs and milk; beat well. Sift together flour, baking powder, and salt and add to other ingredients.3. Fill well-greased or oiled muffin tins 1/4 full, then place about 1 tsp. of blueberries in each section4. Then top each section with batter until 2/3 full.5. Bake at 400 degrees for 20 to 30 minutes.Makes 2 dozen |
